【Sugar Free】【Almost Keto】Double Layer Cheesecake Coming Soon

When the store manager went to Tokyo for an inspection, he saw a special exhibition of Hokkaido desserts at Ueno Station. Normally, women would queue up for dessert shops. The first shop to close that day was the Letao double fromage cake counter in Otaru. The store manager had a whim, isn't this cake also very suitable for our sugar-free ketogenic version? So after returning to Taiwan, I started to research and develop.
 
It seems boring to copy other people's taste, so I want to say let's make a purple version, if there is time, I can catch up with Mother's Day. I didn't expect purple cake to be super difficult to make. I wanted to say that it must be purple to make it with purple blueberries and purple potatoes, right? Unexpectedly, the anthocyanins in these ingredients reacted with the alkalinity in the eggs, and the beautiful purple turned into a cloudy gray. Only then did I realize that the purple cakes we ate outside, including taro, must have artificial coloring...
 
After countless failures, the store manager finally used only natural ingredients to make a purple cake that does not need to add coloring but still has the same elegant color. Our double layer cheesecake, the lower layer is a heavy cheesecake flavored with purple potato (keto) and the upper layer is a raw mascarpone cheesecake flavored with blueberries (keto). The cake crumbs on the outer layer are purple potato and Meyer lemon flavored chiffon cake (non-ketogenic). The sweet and slightly sour blueberry tiramisu is mixed with the slightly floral sweet purple potato cheese, and a thin layer of pink and purple sweet and sour chiffon cake snowflakes enhance the taste. Let the cheesecake also taste light and clear, refreshing and not greasy...
